Easy Paleo Pesto Flatbread

This paleo pesto flatbread utilizes a few store bought ingredients to create the perfect complement to a light dinner. I don’t usually use a lot of store bought ingredients, but sometimes I just don’t have time to make everything from scratch.
These days grocery stores are very well stocked with sauces and mixes that fit into the paleo lifestyle. I love keeping these items in my pantry and refrigerator for busy weeknights when I need dinner on the table quickly. This flatbread is very similar to a focaccia which has always been one of my favorite breads!
I always crave bread when I am eating soup or a salad. This recipe is the answer to that craving when I am trying to stick to my mostly paleo(ish) diet. I 100% commend people who stick to the paleo diet completely, it’s a challenge for me. I do, however, incorporate the best parts of the lifestyle, with a few additions of beans here and there.
Does paleo bread have grains?

The terms paleo and grain free can get a little confusing. All things that are labeled as “paleo” are grain free, however not all things that are “grain free” are paleo. Confusing right?!
Grains include wheat, barley, rye, and oats (to name a few). These are not a part of the paleo diet as they are considered of the agricultural age. The paleo diet also does not include legumes which are not grains, but are still not considered “paleo”.
Grain free breads, pastas, and other baked goods can sometimes include legumes such as chickpeas, black beans, or lentils. This is where the big difference between “grain free” and “paleo” comes in.
So, if a pre made bread, recipe, or mix labels itself as “paleo” it is automatically grain free. And there you have it!
How to make paleo pesto flatbread
This recipe “cheats” a little but, honestly, I don’t know who we think we are cheating. If it came out of our own oven, I say, it’s homemade!
Bob’s Red Mill and Simple Mills both make an excellent paleo or grain free flatbread mix. This will be the base for our recipe. Just mix the bread according to the package and add 2 tbsp or garlic powder.
Here’s how you make your easy paleo pesto flatbread:
- Mix the bread dough according to the package and add 2 tsp of garlic powder
- Pat the dough into an oiled 9″ cast iron pan
- Top with homemade paleo pesto or store bought (vegan pesto is always an option)
- Add sliced tomatoes
- Bake at 350 degrees for 30 minutes
- Cool and slice

What ingredients are in paleo flatbread?

Flatbread Mix: I have come to love paleo baking mixes. They provide a fantastic base for your own additions and flavoring. I have used both Bob’s Red Mill and Simple Mills with great success. These can be found at well stocked grocery stores, Target, and Amazon. These mixes usually have a combination of almond flour and arrowroot or tapioca starch. They are pretty plain on their own, but provide a perfect base for our flatbread.
Paleo Pesto: Most vegan pestos are also paleo since they do not contain any parmesan cheese. Be sure to check the type of oil that is used in the mixture though. I really like the kale pesto at Trader Joe’s when I’m not making my own. This recipe would be a great application for my carrot top pesto!
Tomatoes: Small, deep red tomatoes are perfect for this flatbread. I like to slice them thin and lay them all over the top. You could also use half cherry tomatoes and create a beautiful design.

- 9" Cast Iron Pan
Ingredients
- 1 package paleo flatbread mix Bob's Red Mill or Simple Mills
- 1/4 cup pesto store bought or home made
- 3 tomatoes sliced thin
- a/n olive oil
Instructions
Paleo Pesto Flatbread
- Preheat the oven to 350 degrees.
- Mix the flatbread according to the package. These usually include adding eggs, oil, and water to the mix and letting it rest for 5 minutes.
- Brush a 9" cast iron pan with the olive oil.
- Pat the flat bread into the cast iron pan, going all the way to the edge.
- Spread the pesto on top of the flat bread.
- Cover the flatbread with tomato slices.
- Bake for 25-30 minutes and let cool for 5 minutes.
- Slice and enjoy!
