Keto Sliders with Mushrooms, Bacon & Swiss

I have never been a big fan of football, but I have always been and always will be a big fan of snacks. Enter the best Keto sliders with mushrooms, bacon, & Swiss I have ever had. I have never committed to the Keto lifestyle, but I do like to create Keto recipes for my many friends and family that love it. These Keto sliders are perfect for sharing on game days.

Keto snacks usually lean on the meaty, heavy side, and these sliders fall right into that category. These are not for the faint at heart, but they are quite addictive!

How do you make keto sliders?

I have seen a lot of recipes for Keto meatballs or bunless patties trying to pass off as hamburgers. These sliders change everything you thought you knew about Keto hamburgers.

Grass-fed beef (or Beyond Meat for a vegan version) patties are pan fried and topped with Swiss cheese and small strips of bacon. Then comes the game changer: roasted stuffing mushrooms are used as mini buns.

Mushrooms are one of my favorite burger toppings, but they always fall off and honestly make a huge mess. Now, the mushroom is the bun and it is honestly the best gluten free bun I’ve ever had. I will warn you, these can get a little messy, but what burger isn’t?

What do I need to make keto sliders?

Grass Fed Beef: I exclusively eat grass fed beef. It tastes better, it’s better for the environment, and it’s just better overall. It is widely available at most grocery stores these days.

Swiss Cheese: the combination of mushrooms and Swiss is classic. However, if you don’t like Swiss, feel free to use a good melting cheese of your choosing.

Bacon: look for bacon that has no sugar added to keep it truly Keto.

Mushrooms: you’ll need 2 decently sized baby portabello mushrooms per slider. It’s best to find these at the bulk section of your store, or you can buy a few packages and find the biggest ones. Save the smaller ones for other recipes.

Substitutions: these sliders can easily be veganized by using Beyond Meat and replacing the Swiss cheese with either sauerkraut or caramelized onions. If you don’t eat beef, you can use ground turkey and turkey bacon for an equally delicious slider.

The Best Keto Mushroom Bacon Swiss Sliders

Ingredients
  

Mushroom Bacon Swiss Sliders

  • 1 lb grass fed beef or Beyond Meat ground
  • 2 tsp steak seasoning
  • 20 each stuffing mushrooms 1 1/2 -2 inch diameter, stems removed
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 3 slices Swiss cheese cut into 4 squares
  • 5 slices bacon cut into 4 pieces
  • 2 tbsp mayonnaise optional

Instructions
 

Roasted Mushroom Buns

  • Preheat the oven to 375 degrees.
  • In a large bowl, toss the mushrooms, olive oil, salt, and garlic powder.
  • Line the mushrooms on the sheet tray and bake them stem side up for 20 minutes.
  • Once baked, cook slightly and pour out any liquid in the cap and place on a paper towel to dry a little.

Hamburger Patties

  • While the mushrooms are baking, place the ground beef or Beyond Meat in a bowl. Add the steak seasoning and mix thoroughly.
  • Form the meat into 10 equal patties.
  • Heat a heavy skillet (cast iron works best here) and add the patties, making sure not to overcrowd them. You may need to do this in two batches.
  • Once the burgers are browned on one side (about 4 minutes) flip them and add one small square of cheese on top. Keep in the skillet until they are cooked through, about 3-4 minutes more.
  • Remove the burgers from the heat and keep warm.

Assembly

  • Place ten mushroom caps on a platter and add a dollop of mayonnaise if desired.
  • Add one burger on top of each mushroom cap.
  • Place two slices of bacon on top of each burger.
  • Add another mushroom cap on top of the bacon and secure with a toothpick.
  • Enjoy!!

Notes

These Keto sliders are easily made vegan by switching out to Beyond Meat, skipping the bacon and cheese and replacing it with sauerkraut or caramelized onions.
Enjoy these sliders within 20-30 minutes of making them, though they can be reheated.
The roasted mushrooms can be made ahead of time and re warmed while the burgers are cooking.
